The brief

Trapper’s Bakery in Goulburn, a landmark stop along the Hume Highway, is renowned for its pies, coffee, and open fireplace.

The design brief called for a full interior refurbishment while preserving the venue’s bush character. The designer observed daily operations before developing layout options aligned with the brief. The new plan improved functionality with a connected lineal counter, custom refrigerated cake displays, and a dedicated coffee station to streamline staff flow and service.

To handle high customer volumes, multiple order stations were incorporated to reduce queuing. Kitchen workflows were reconfigured for efficiency, and a 1:1 scale mock-up of the counter allowed for fine-tuning before installation.

Seating zones were redesigned with a mix of refectory-style timber tables, black Tolix stools, and booths. Custom joinery integrates self-serve stations—bins, condiments, and tray returns—softened by rustic textures and cascading greenery.

Despite tight timelines, the fitout was completed in four weeks, with a temporary café next door ensuring minimal disruption to operations.

Maintaining the bakery’s bush character was essential to the design. The original hessian ceiling panels with their well-known sayings, along with the storyboard of how ‘Trapper’ earned his nickname trapping rabbits, were preserved to retain the site’s identity.​

The main counter features horizontal rustic timber boards, subtly echoing traditional paddock fencing. The coffee station is formed from smooth stone and anchored by a Corten steel “Trappers” logo, adding a weathered architectural element. Oversized metal pendant lights define the zone and create a strong visual focus along the counter line.​

The stone fireplace is a focal point during the winter season always roaring with burning logs. The stonework and scale of fireplace adds presence to the seating area. Traveller's stop by just to warm up by the fire and enjoy a coffee and a hot pie! ​
